Ingredients
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 3/4 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2/3 cup melted coconut oil (or dairy-free margarine)
- 2 large eggs
- 2 tsp vanilla extract
- 1 1/2 cups dairy-free chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment.
- Whisk flour, baking soda, and salt in a bowl.
- In another bowl, mix sugars with melted oil until smooth. Beat in eggs and vanilla.
- Stir dry ingredients into wet until just combined. Fold in chocolate chips.
- Scoop 1.5 tbsp rounds onto sheets, 2 inches apart. Bake 10–12 min until edges are golden.
- Cool on the sheet 5 min, then transfer to a rack.
