Ingredients
- 2 cups gluten-free flour blend
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup sugar
- 2 eggs
- 1/2 cup oil
- 3/4 cup milk
- Zest of 2 lemons
- 1/4 cup lemon juice
Instructions
- Preheat oven to 350°F (175°C). Grease an 8x4 or 9x5 loaf pan.
- Whisk dry ingredients. Whisk eggs, milk, oil, zest, and lemon juice.
- Combine wet and dry until smooth. Pour into pan.
- Bake 35–40 min until golden and a toothpick is clean. Cool before slicing.
