Ingredients

  • 2 cups gluten-free flour blend
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup oil
  • 3/4 cup milk
  • Zest of 2 lemons
  • 1/4 cup lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8x4 or 9x5 loaf pan.
  2. Whisk dry ingredients. Whisk eggs, milk, oil, zest, and lemon juice.
  3. Combine wet and dry until smooth. Pour into pan.
  4. Bake 35–40 min until golden and a toothpick is clean. Cool before slicing.
