Brazilian Carrot Cake

Fluffy carrot cake with glossy chocolate glaze-great with coffee.

Ingredients

  • 3 medium carrots, peeled and chopped
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • Pinch of salt
  • Chocolate glaze: 1/2 cup cocoa, 1/2 cup sugar, 2 tbsp butter, 1/4 cup milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round pan.
  2. Blend carrots, eggs, oil, and sugar until smooth.
  3. Whisk flour, baking powder, and salt; fold into wet batter.
  4. Pour into pan; bake 35–40 min until a toothpick is clean. Cool in pan.
  5. For glaze, heat cocoa, sugar, butter, and milk until smooth; pour over cooled cake.
