Ingredients
- 3 medium carrots, peeled and chopped
- 3 large eggs
- 1/2 cup vegetable oil
- 1 1/2 cups granulated sugar
- 2 cups all-purpose flour
- 1 tbsp baking powder
- Pinch of salt
- Chocolate glaze: 1/2 cup cocoa, 1/2 cup sugar, 2 tbsp butter, 1/4 cup milk
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round pan.
- Blend carrots, eggs, oil, and sugar until smooth.
- Whisk flour, baking powder, and salt; fold into wet batter.
- Pour into pan; bake 35–40 min until a toothpick is clean. Cool in pan.
- For glaze, heat cocoa, sugar, butter, and milk until smooth; pour over cooled cake.
