Chocolate Chip Cookies (Dairy-Free)

Classic soft cookies with melty chocolate chips; no dairy, easy to bake in one bowl.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2/3 cup melted coconut oil (or dairy-free margarine)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups dairy-free chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment.
  2. Whisk flour, baking soda, and salt in a bowl.
  3. In another bowl, mix sugars with melted oil until smooth. Beat in eggs and vanilla.
  4. Stir dry ingredients into wet until just combined. Fold in chocolate chips.
  5. Scoop 1.5 tbsp rounds onto sheets, 2 inches apart. Bake 10–12 min until edges are golden.
  6. Cool on the sheet 5 min, then transfer to a rack.
